Pot Pie – Turkey pot pie

Turkey pot pie, like chicken pot pie, but we leveled up with smoked turkey! We didn’t get enough turkey at Thanksgiving so we decided to fire up the smoker and smoke a half turkey. Being a small family of three we didn’t make it through the whole turkey. So we had leftover turkey and needed to make use of it. I gotta tell you this was a little of a different recipe with the cream base you can use a few cups of heavy whipping cream in place if you don’t want to go our route. But I think it was exactly the reason it was so good.

This recipe for Turkey pot pie can be done with chicken if you don’t have turkey handy. But honestly turkey was a great choice and something we will be doing again. Now don’t be too concerned with the moisture in the filling, because we use coconut flour which is a liquid sponge and also xanthan gum for thickening. We did use peas and carrots but it was just a couple cups total for the whole pan, and when you break down into servings it is not too bad. Also…. I didn’t get fat eating too many carrots or peas if I’m being honest with myself. Right?

The biscuit topping was strange we admit but when it combines with the filling it turns into a comfort food. We started with something similar to fat head style dough with a cheese base but using the cheddar cheese allows this to be browned and is closer to the vision of pot pie. Lets face it we eat with our eyes. The process looks strange but the flavor and the look of this pot pie is legit. Its creamy, rich, and decadent comfort food. You’ll have raving fans with this one.

Pot pie has to be creamy so we used sour cream…. yes sour cream. You can use two and a half to three cups of heavy whipping cream if you want but we had sour cream on hand and it was amazing. We used xantham gum but you can use guar gum if you’re more comfortable with it. either will do and you don’t need more than a half teaspoon to thicken this just enough. the coconut flour and baking this for 35 minutes will thicken the sauce in the pot pie. you are looking for a sauce that is just thick enough to coat the spoon back. it will seem way too wet of a filling but the heat xanthan gum and the biscuit topping will take care of it.

You want to make the biscuit topping thin and gently put it on top of the filling, we tried tolling ti our and baking it that way but the topping having the coconut flour dried the biscuit topping and wasn’t too good, so we added a couple tablespoons of water and that worked well. we also baked them separately and it was good but not nearly as good as the final recipe. you can see the two cook styles below.

Smoked Turkey Pot Pie
Filling:
Two-three cups chopped or pulled chicken or turkey
1 1/2 – 2 cups peas & carrots
2 cups sour cream
2 cups chicken broth or water
2 tbs mozzarella cheese
1 tsp xanthan gum
2 tsp poultry seasoning
salt and pepper to season
Biscuit topping:
2 ounces cream cheese
1 cup mozzarella cheese
1 egg
2 cups cheddar cheese
2 tbs water
1 tsp salt
1 tsp pepper
1 tbs coconut flour ( estimate)
Preheat oven to 425. Start with pulling the turkey or chicken and chopping to bite size pieces set aside with peas and carrots while you begin sauce. Combine sour cream, water/broth, bring to simmer pull off heat and add in mozzarella cheese, salt, pepper, and poultry seasoning we use Bell’s. Whisk together and add xanthan gum sauce should be just thick enough to coat the back of the spoon. it will be a tasty soup and you could easily add the chicken, peas and carrots and eat it like that but the biscuit topping makes it for us. Add turkey, peas and carrots to sauce and set aside.
In a microwave safe bowl combine cream cheese and mozzarella cheese heat to melt and combine. Add in egg, cheddar, water, coconut flour, salt and pepper. It will be a loose mixture but the combination of these two mixtures will work with one another in the oven. Bake off for twenty five minutes to thirty minutes until sauce begins to thicken and the biscuit topping browns. allow to rest for ten minutes or so, because the mixture is the same temperature as the sun… but its such a tongue burn that was worth it.
